Cooking Filipino Food: Adobo
Let it be said: Filipinos love to eat.
There are Filipino communities everywhere and this is why you will notice the availability of Filipino food around the world. Filipinos are rice people. They just love rice. This is the main reason why most Filipino food are best eaten with rice. Given the popularity of Filipino food, people all over the world are looking for Filipino recipes. This being said, more and more people are able to taste our wonderful Filipino cuisine.
One of the most famous Filipino foods is the dish called Adobo. There are many different adobo varieties, really. There are some Filipino recipes of Adobo that use chicken as the main protein. So let us prepare the ingredients. First prepare your protein. Get around 4 to 5 lbs of your protein. Remember, you have the freedom to choose to use either pork or chicken. Then, get 1/2 cup of vinegar and ½ cup of soy sauce. Get 4 cloves of garlic as well as 3 pieces of bay leaves. Lastly, prepare 1 tablespoon of peppercorns. Get 2 medium sized potatoes and cut them into wedges. If you would want to add pineapples, you can do so as well. Add the amount of pineapples of your liking. These are the basic ingredients that are used in the famous Filipino adobo.
Now, for the directions of cooking these famous recipes, combine all the ingredients in a large pot except for the pineapples or potatoes. Bring the potatoes into a boil to be cooked separately. Keep in mind that this recipe should be marinated for a while. Some people choose to marinate protein for about 3 hours. There are some people who choose to marinate it longer. When I say longer, some people marinate the dish for 24 hours or more. This will ensure that the protein will be able to absorb the sauce so that it will be tastier.
After you marinate your adobo, you are now ready to cook it. Simply bring the whole pot to a boil in low heat. Just leave it covered and let it simmer for 30 minutes. Do not forget to occasionally stir. After letting it boil for 30 minutes, you can now take out the cover and just let it sit. Wait until the sauce is reduced. This will thicken the sauce as well. Now you can add the potatoes or the pineapples. Again, let it simmer until the protein is cooked and tender. Normally, this takes around 20 more minutes but make sure to check every now and then so that the protein will not get over cooked. Voila! You have now cooked the famous Filipino food adobo.
Adobo is served with rice. The best thing about these food recipes is that they are so easy to cook and prepare. Yes, it can take quite a while but it is up to you. If you don’t have much time, you can easily cut the marinating time to at least an hour. However, you can expect that the protein will not be as tasty as the adobo that is marinated for 24 hours or more. Well, adobo is adobo.
